A guilt-free vegetarian recipe that can be put together quickly for meals on the run. Simply toast, top, sprinkle and take it up a notch with the addition of fried egg. Serves one.
1 pc Bagel
1/4 cup Hummus
1/2 Avocado, sliced
1/2 Cucumber, sliced
1/2 Tomato, sliced
Pinch of Black Pepper
Arugula Leaves
Fried Egg
- Slice bagel and toast if desired.
- Spread hummus on one side, layer avocado and arugula and sprinkle on pepper.
- Top bagel sandwich with fried egg and serve.
