Breakfast Bagel with Avocado, Arugula and Hummus

A guilt-free vegetarian recipe that can be put together quickly for meals on the run. Simply toast, top, sprinkle and take it up a notch with the addition of fried egg. Serves one.

1 pc Bagel
1/4 cup Hummus
1/2 Avocado, sliced
1/2 Cucumber, sliced
1/2 Tomato, sliced
Pinch of Black Pepper
Arugula Leaves
Fried Egg

  1. Slice bagel and toast if desired.
  2. Spread hummus on one side, layer avocado and arugula and sprinkle on pepper.
  3. Top bagel sandwich with fried egg and serve.
