Whoever thought that a simple breakfast with avocado at its heart would be the ideal way to ease into the day? This is perfect grub for those lazy weekend mornings. The lemon gives this recipe a tangy kick while the rich yolky goodness of the egg lends the perfect balance. Serves one.
1/2 Avocado
Sea Salt, to taste
1 tsp Lemon Juice
1 Egg, poached
1 slice Sourdough Bread
6 slices Smoked Salmon
Capers and Seeds (for garnishing)
- Transfer the avocado flesh to a bowl.
- Add the salt and lemon juice and crush until smooth.
- Layer the mashed avocado, smoked salmon and poached egg on the slice of bread in that order.
- Sprinkle with capers and seeds evenly across the surface and serve.
